How our signature Shami Kebabs are made 

Ingredients: 

For the Kebabs: 

  • 500g minced beef or chicken 
  • 100g split red lentils (masoor dal) 
  • 1 large onion, finely chopped 
  • 4-5 cloves of garlic, minced 
  • 1-inch piece of ginger, grated 
  • 2-3 green chilies, finely chopped (adjust to taste) 
  • 1/4 cup fresh cilantro, chopped 
  • 1/4 cup fresh mint leaves, chopped 
  • 1 teaspoon cumin powder 
  • 1 teaspoon coriander powder 
  • 1/2 teaspoon garam masala 
  • 1/2 teaspoon turmeric powder 
  • Salt to taste 
  • 1 tablespoon lemon juice 
  • 1 egg (optional, for binding) 

For Grilling: 

  • Oil (for brushing) 

Instructions: 

Cook the Lentils: 

Rinse the split lentils under cold water until the water runs clear. 

In a pot, add lentils and cover them with water. Bring to a boil and cook until soft, about 15-20 minutes. Drain and set aside. 

Prepare the Meat Mixture: 

In a large mixing bowl, combine the minced meat, cooked lentils, chopped onion, garlic, ginger, green chilies, cilantro, and mint. 

Add cumin powder, coriander powder, garam masala, turmeric powder, salt, and lemon juice. Mix well to combine all ingredients.
